"Replace milk in recipes with soy milk"?
Edamame as garnish? Why not? Try them with tequila-based drinks and spear them instead of olives!
Tofu, you say? Get some of that firm stuff, cube it and drop it into a steaming-hot mug of Spiked Broth, or get evil: mix the leftover flavor packet from a ramen package with some panko, bread some tofu slices and fry 'em as yummies instead of pre-packaged mundane salties like peanuts or pretzels. You can even spear it with a wooden skewer and use it to garnish a Bloody Mary!
Soy Milk... ok... if we must... you have to remember than in mixology, Milk is used as much for its fat content than for its flavor, color or consistency; in any drink that you might use skim or no-fat milk, you can use soy milk. Soy milk Blends particularly well with bananas in frozen cocktails, particularly as "soy ice cream" (or whatever they are calling it these days).
