Kirsch, or kirschwasser, is a clear, colorless fruit brandy traditionally made from double distillation of dark morello (sour) cherries, after they have fermented whole (including pits).
Unlike cherry liqueurs and so-called “cherry brandies”, kirsch is not sweet.
